Quanta pioggia, ed ora il gelo... Ma siamo pronti per la biodinamica - So much rain, and now everything is frozen... but we are ready for biodynamic

Quel Sabato prima delle ultime piogge, Luca era arrivato di buon'ora, con Eugenio ci eravamo svegliati un po' prima per fare colazione ed assaggiare il vino. La colazione alla Pasticceria Asti di Bagno di Gavorrano è un rito antidepressivo, qui le nostre paste vengono sempre riportate nel laboratorio per un'ulteriore farcitura di panna o Nutella.

Da allora le attività in vigna si erano arrestate, ma con Davide si sono raccolte le olive e si sono fatti diversi lavori di manutenzione. Oggi però la terra si è fatta più soda e sarà finalmente possibile entrare nei vigneti.

Quest'anno i sovesci, pratica che consiste nell'interrare alcune colture dopo averle seminate e fatte crescere, verranno effetuati a filari alterni. Pianteremo graminacee (orzo e avena) le quali andranno in competizione con le viti, e ne diminuiranno il vigore, inoltre hanno radici molto sviluppate che aerano il terreno e creano un ambiente favorevole a certi organismi benefici. L'orzo in particolare elimina i ristagni d’acqua e migliora la struttura del terreno.
Assieme a queste pianteremo le leguminose (colza, brassica e favino) in quanto queste sono tra le poche specie vegetali in grado di fissare direttamente l'azoto atmosferico. Con tale sovescio si trasferisce, tramite l'azotofissazione, azoto dall’atmosfera al terreno.L'interramento avviene in fioritura, in genere a fine maggio, quanto è massimo l'accumulo d'azoto nelle leguminose. Inoltre colza e brassica hanno un effetto purificante per il terreno.I filari non seminati verranno smossi in superficie e l’anno prossimo saranno oggetto di sovesci.

Sempre prima della caduta delle foglie andremo a prevenire l'attacco dell'oidio attraverso l'inoculo dell'AQ10 (Ampelomices Quisqualis) battere che uccide il corpo svernante dell’Oidio bucando la parete cellulare del fungo e portandolo a disidratazione. Mentre dopo la caduta delle foglie andremo ad intervenire con il preparato 500k (corno letame con alcuni preparati da cumulo). Tale preparato si spruzza a goccia sul suolo - i giorni migliori sono quando il terreno lo consente, poi meglio se la giornata è umida, coperta e tiepida e comunque sempre dopo le ore 15.00 (quando il terreno inspira). Per tale preparato occorre dinamizzare l'acqua cioè mescolare l'acqua per lungo tempo creando vortici alternativamente in senso orario ed in senso antiorario.
La potatura verrà effettuata nelle giornate di luna calante in prossimità della luna nuova (quando la linfa si trova in basso). Si è ossservato infatti che in primavera la pianta riparte meglio. Poteremo “alla Montalcino” cioè con una gemma di corona più quella superiore. Dopo aver trinciato i tralci si procederà ad una nuova spruzzatura del 500K con analoga preparazione.

That Saturday, before the last rains, Luca arrived early in the morning, and Eugenio and I had woken up early to have breakfast and taste the wines. Our breakfast at “Pasticceria Asti” in Bagno di Gavorrano is an antidepressive rite, with extra pastries always making their way back to the laboratory for a further filling of whipped cream or Nutella.

It had been some time that the activities in the vineyard had stopped, but in the meantime Davide had harvested the olives and done maintenance works. Today the ground is firm enough so we will finally be able to enter the vineyards.

This year, the “sovesci”practice ,that is burying special grass that has been expressly grown apart, will be done at alternate rows. We will plant the “graminacee” (bowline and oat) which compete with the vines for nutrition and water and will decrease the vigour of the vines. These plants have very developed roots that will also aerate the ground and create a favorable environment for some beneficial organisms. The bowline plant in particular eliminates the stagnate water and improves the structure of the soil.

Together with the bowline and oat, we will plant the leguminoses (“colza”, “brassica” and “favino”), plants that are a part of the few vegetable species able to directly fix the atmospheric nitrogen. With the “sovescio” practice, we transfer through “azotofissazione” nitrogen from the atmosphere to the soil. The burying happens in the flowering season, generally at the end of May, when the nitrogen accumulation in the leguminoses is maximum. The “colza” and “brassica” have a purifying effect for the ground. The rows that will not be sowed for the “sovesci” will be surface raked and the next year will be subjected to “sovesci”.

Also before the leaves falls, we will try to prevent the attack of the “oidium” through the inoculation of the AQ10 (Ampelomices Quisqualis), a bacteria that kills the winter body of the “oidium”, puncturing the cellular wall of this mushroom and dehydrating it. After the leaves fall, we will spray with the 500K preparation (a biodynamic “horn manure”). This preparation is sprinkled as drops on the ground. The best time to do it is when the day is humid with cloud cover and warm and always after 3 pm (when the ground inhales). For such preparation it’s important to “dynamize” the water (mix the water for long time alternatively creating vortexes in one sense and in the other).

The pruning will be done in the days of waning moon but in proximity of the new moon (when the sap is still down). It has been observed that doing that, the vine in the spring will start better. We will prune “Montalcino style” which is cutting at 2 buds. After having crushed the shoots we will proceed with a new spraying of 500K preparation.
