La seduzione dell’imprevedibile - Seduction of the unpredictable

Vorrei condividere con le persone più care alcune riflessioni sul vino, pensieri e sensazioni che nascono dall’analisi di un anno di vinificazione che si è concluso con l'imbottigliamento dell’annata 2007 di Podere San Cristoforo.
Oggi è possibile guidare un vino verso uno “stile” ben definito, con precise caratteristiche di morbidezza ed aromaticità. Ci sono centinaia di variabili tecniche che possono essere scelte per ottenere un certo tipo di vino. Si tratta di procedure che è necessario seguire per ottenere vini piacevoli senza difetti e soprattutto che rispecchino l’idea che il produttore ha del suo vino. Lo “stile” è molto importante perché porta l’eno-appassionato a riconoscere il proprio gusto in quello del produttore. La mancanza di uno “stile” può essere un problema per il consumatore in quanto non gli permette di sapere in anticipo se quel vino incontrerà o meno il suo favore. Spesso si pensa che la stessa varietà coltivata nello stesso territorio porti ad un vino con un preciso sapore, e si è spesso delusi nel constatare che questo non avvenga. Perciò l’appassionato si affeziona al vino di un produttore, che in genere mantiene uno “stile”, piuttosto che al vino di una zona ben definita. Sicuramente la coerenza di “stile” per un’intera regione viticola porterebbe al successo tutti i suoi produttori.
Ma lo “stile” di un vino per un appassionato produttore è solo una parte del “far-vino”. Non vorrei essere frainteso, non è facile ottenere vini tecnicamente ben fatti, ed oggi è probabilmente una condizione necessaria.
Ho bisogno di raccontarvi che l’emozione è capire che si può andare al di là dello “stile”. Vorrei farvi partecipi della mia idea di vino: un prodotto vivo che, nonostante le scelte attente, non può essere rinchiuso nella “stanza della tecnica e del controllo”. Il vino segue sempre il suo naturale percorso, ed è questa la parte più curiosa ed interessante. Per similitudine potremmo dire che la specifica educazione di un uomo non lo condurrà ad un futuro ben definito. Così è per il vino. Ora quel vino, del quale ho sempre nutrito una chiara idea, riposa nella bottiglia e vorrà mostrarsi nelle sue molteplici espressioni.
In altre parole, l’anima di un vino non può essere cambiata radicalmente, dipende dalla natura di ogni varietà d’uva, dall’annata e dal territorio (considerato come quintessenza del vino). Siamo così abituati ad un approccio conoscitivo di causa-effetto che non proviamo più emozione per i risultati. il vino può ancora stupirci, questa sua dimensione ignota lo rende uno dei prodotti più speciali del mondo.

I would like to share with my nearest and dearest some considerations on wine, thoughts and sensations that emerge from the analysis of a vinification year that ended with the bottling of the 2007 Podere San Cristoforo vintage. Today it is possible to guide a wine towards a well defined “style”, with certain characteristics of roundness and aromas. There are hundreds of technical variables that can be chosen to get a specific “type” of wine. It's about practices to obtain wines that are pleasant without defects and mostly that reflect the producer’s idea of his own wine. The “style” is very important because it leads the consumer to match his tastes with those of the producer. Lack of “style” can be a problem for the consumer because it doesn’t allow him to anticipate the taste of a specific wine. People often think that the same variety grown in the same region results in a wine with a certain taste and are often disappointed when they realize it’s not true. This is why people are more faithful to a producer, who has a well-defined “style”, than to a specific region. Consistency in the “style” of an entire wine region will lead all its producers to market success. But the “style” for a passionate producer is just a part of “winemaking”. Don’t get me wrong, it is not easy to obtain wines that are technically well done. I need to tell you that the emotion is in the possibility to go beyond the “style”. I would like to share with you my idea of wine: an alive product that, despite the accurate choices, cannot be locked into a “technique room”. This wine will always follow its natural path and this is the most curious and interesting part of “winemaking”. Just as a man’s specific education will not conduct him to a certain future. So is it for the wine. My wine, for which I have always had a certain idea of, is now resting in the bottle and will reveal itself with its own multiple expressions. In other words, the soul of a wine cannot be radically changed, it comes from the nature of each grape variety, the vintage, the “terroir” (considered as the wine quintessence). We are so accustomed to a cognitive cause-effect approach that we are not anymore amazed by the results… wine can still arise enthusiasm because of its “unknown dimension” that makes it one of the most special products of the world.
